Fresh Summer Salad

This fresh Summer Salad is always on rotation at my house during the warmer months. It’s super easy to prepare and only requires 3 ingredients. I love to serve this as a side to whatever we have on the grill or pack it for lunch with some chicken mixed in.

Fresh Summer Salad

Ingredients:

  • 2 cups cherry tomatoes, cut in half
  • 1.5 cups of frozen corn  (I like to use the Trader Joe’s Roasted Corn), defrosted
  • 1 avocado cubed
  • 2 tablespoon fresh lemon juice or fresh lime juice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix all of the ingredients together and enjoy! Store leftovers in the fridge.
