Fresh Summer Salad
This fresh Summer Salad is always on rotation at my house during the warmer months. It’s super easy to prepare and only requires 3 ingredients. I love to serve this as a side to whatever we have on the grill or pack it for lunch with some chicken mixed in.Â
Fresh Summer Salad
Ingredients:
- 2 cups cherry tomatoes, cut in half
- 1.5 cups of frozen corn (I like to use the Trader Joe’s Roasted Corn), defrosted
- 1 avocado cubed
- 2 tablespoon fresh lemon juice or fresh lime juice
- Salt and pepper to taste
Instructions:
- In a large bowl, mix all of the ingredients together and enjoy! Store leftovers in the fridge.Â
