NJBC Eats: Slow Cooker Bean Chili
Whether you’re working from home, home-schooling your kids or relaxing with your family, this chili recipe is perfect for the whole family. This chili is vegetarian, simple and uses staple ingredients you probably already have in your pantry. It’s also easy to customize with different flavors and veggies that you love. Simply toss everything in the slow cooker and cook on for 2-4 hours. It doesn’t get much better than that!
Ingredients:
- 2 cans of whatever beans you have (black bean and kidney beans) drained
- 1-28oz can of crushed tomatoes
- 1 cup of vegetable broth
- 1 tbsp cumin
- 2 tbsp chili
- 1 tsp salt
- 1 tsp pepper
- (if available, you can add 2 garlic cloves, 1-2 peppers and 1 medium yellow onion chopped)
Instructions:
- Add ingredients to a slow cooker and cook on high for 2-4 hours on high.
