What Am I Eating? Falafel Salad

With such a busy schedule, sometimes take-out is the easiest option when it comes to dinner. I always try to stay on the healthier side which is why I sometimes like to order from Mamoun’s Falafel in Hoboken.

Falafel is a vegetarian patty made from chickpeas and fava beans. Although falafel is vegetarian, it’s very high in plant-protein. Chickpeas are high protein and fiber - both important nutrients in your diet. Consuming enough protein and fiber has been shown to help control your appetite, manage your weight and support controlled blood sugar. 

I love to enjoy mine with a traditional Mediterranean salad consisting of lettuce, tomato, olives, feta cheese, tahini and olive oil - making the meal a well-balanced combination of protein, fiber and nutrient-dense veggies.
