What am I Eating? Trader Joe’s Cauliflower Rice Stir Fry

I’m always looking for ways to make a quick dinner. Trader Joe’s cauliflower rice stir fry is one of my favorite go-to’s for a fast meal or side-dish.

As a substitute for regular rice, cauliflower rice has quite a few benefits as a side or a meal. First, cauliflower rice has significantly less calories and carbohydrates than traditional white rice. So for someone watching their carb intake this is a great choice. Swapping your rice out for cauliflower also provides your meal with more vitamins such as vitamin C, vitamins K and B6. It is also rich in certain antioxidants that help fight inflammation. Let’s not forget about fiber - there are 3 grams per cup of cauliflower rice which is 10% of your daily needs. 

This cauliflower rice stir fry is something my entire family enjoys. Sometimes I scramble some eggs, and add it right into the mix, or serve it as a side with some grilled chicken and salad. All you need is 2 tablespoons of olive oil in a non-stick pan and 5 minutes to heat it up. Enjoy!
